Wine review: the best champagne for New Year’s Eve

As we say goodbye to 2018, it’s a comforting thought that every waking moment throughout the world there are sparkling-wine corks being popped in anticipation, celebration and inspiration.

But before the revelry, a quick word of advice on opening a bottle. First, chill it to between 6C and 9C. Then, carefully remove the foil and twist the small wire key to loosen the mesh. With the wire removed, quickly grip the cork. Under no circumstances should you leave a bottle unattended with the cage removed, as the cork is likely to fly off and — given the velocity — it can do a fair bit of damage. Furthermore, the wine will soon follow, wasting at least a glassful.
