The history of Nyetimber

Nyetimber takes its name from the Domesday Book of 1086, when the valley of Nitimbreha in the lee of the South Downs made its first appearance in the records. Just over 900 years later in 1988, the first vineyards were planted, the greensands and chalk soils of this part of England providing the perfect landscape for growing the holy trinity of sparkling wine grapes – Chardonnay, Pinot Noir and Pinot Meunier. Ever since, the wines made here have been internationally recognised as some of the best, and now, under the care of owner Eric Heerema and Head Winemaker Cherie Spriggs, the Nyetimber name is associated with craftsmanship, passion, and attention to detail.

Sweet sparkling wine

The latest addition to the Nyetimber range is named Cuvee ​Chérie, a subtle reference to the sweetness of this refined, contemporary wine, and an allusion to Cherie Spriggs. Cuvee Chérie is a Demi-Sec wine, made from 100 per cent Chardonnay grapes. All Nyetimber’s wines are elegant, delicate and subtle rather than rich, powerful or dense, and this release plays to that style. With aromas of lemon, mineral and honey, and a sweet start finished by crisp acidity on the palate, it has a very clean balance between zest and sweetness making it a versatile pairing for different dishes.

Food pairings

In fact, it was designed to be that way, its slight sweetness making it a good complement for delicate desserts like fruit tarts, meringues, lemon posset, and afternoon tea with scones and jam. However, its range is broader than that. Try a glass with tuna sashimi, Singaporean laksa or Thai pomelo salads and you’ll be surprised. Its citrussy character makes it a strong partner to foods with spice and fragrance, particularly the more aromatic cuisines of Asia. And though delicate, when paired with richer terrines and pâtés, the minerality of Cuvee Chérie brings a freshness that balances out the food immaculately, meaning there’s no excuse not to turn any meal into a celebration worth popping a cork for.
